Pineapple Laddoo

Today's recipe is Pineapple laddoo.  I love this sweet and never miss a chance to make it whenever I buy a pineapple.
Let me warn you friends,  these laddoo are so very addictive 😀 Whenever I make them they gets finished up on the same day 😁
Its a straight forward recipe and even beginners can make it perfectly.  Let's make it.  Happy Cooking ☺




Makes - 15 laddoo
Preparation Time - 5
Cooking Time - 15 min

Ingredients -

Pineapple pulp                   -     3/4 Cup
Sugar                                 -     6 tbsp
Milk powder                      -     1/2 cup
Desiccated coconut           -     1/2 cup
Cardamom powder            -     1 pinch



Method -
  • In a non stick pan, take pineapple paste and cook it until it gets a bit thick. 
  • Add milk powder and desiccated coconut. Mix very well. Add sugar and cardamom powder and mix again. Let the mixture cook until it starts leaving the sides of the pan. 
  • Remove the mixture to a big bowl and let it cool down completely. 
  • Take small portion of the mixture and roll it in between your palms and shape it into ball/laddoo.  Likewise, make laddoos with the remaining mixture. 
  • Roll the prepared laddoos in desiccated coconut. Serve.
  • Keep refrigerated in an airtight container and consume within 3-4 days.


Notes:
  • 1. Adjust the sugar level as per your liking.
  •  2. Quantity of desiccated coconut can also be adjusted as per liking but add more milk powder to adjust the consistency. 
  • 3. Instead of cardamom powder you can add a few drops of pineapple essence.

Mawa Coconut Laddoo

Hello to all my readers.  As, the festival of colors, Holi is near, I thought to post this easy laddoo recipe which hardly takes 10 minutes from start to finish.  Its a perfect recipe for beginners.
I used my instant mawa in this recipe but you can use readymade one too (just make sure its fresh).  Sweetness can be adjusted as per taste.
So lets start making these delicious Mawa Coconut Laddoo.  Happy Cooking :)


Makes - 6 laddoos
Preparation - time 2 minutes
Cooking time - 2 minutes

Ingredients :

Mawa / khoya               -     6 tbsp
Desiccated coconut       -    1/4  cup
Powdered sugar 
(I used castor sugar)      -    4 tbsp

Method:

  • Take the mawa in a microwave safe bowl and microwave for 2 minutes while mixing after every 30 seconds . 
  • Remove and let it cool down a little.
  • Add sugar and desiccated coconut.  Mix everything very well.
  • Take a small portion from the mixture and shape it into a laddoo. 
  • Serve.

No Bake Brownie Bites

Hello and a very happy Deepawali to all my dear readers  (sorry for wishing a bit late). After a long time I am coming back to check on my dear little blog.  Anyways, today's recipe will make up for all the delay :)  Its a No Bake Brownie that I made bite sized using my chocolate moulds.  You can make it in any shape and size.  Its pretty easy and even kids can make it with a little help.  Since I used microwave, it didn't take much time.  Just a handful of ingredients are required and you are ready to have a delightful and festive sweet in no time.  So lets start making these cute looking brownie bites.  Happy Cooking :)


Preparation time - 5 minutes
Cooking time - 10 minutes
Makes - 10-12 pieces

Ingredients:

Grated cooking chocolate   - 1/2 cup
Crushed biscuits 
(I used milk bikis)               - 1/2 cup
Condensed milk                  -  2 tbsp
Chopped nuts                      -  3 tbsp
Butter                                  -  1/2 tbsp

Method:
  • Take chocolate and butter in a microwave safe bowl and microwave for 15 seconds.  Remove and stir well.  Again microwave for 15 seconds.  Remove and mix.  At this stage, chocolate would start melting.  Microwave for another 10 seconds and stir well.  If chocolates is melted then you go ahead with the process, if not then again put it in the microwave for another 10 seconds.  
  • Add condensed milk in the melted chocolate and give a nice stir.  Add crushed biscuits and nuts and mix well everything.
  • Shift the mixture to a greased pan or silicon moulds and refrigerate for 1-2 hours.
  • Serve.




Notes:
  1. If you are using some lightly sweet biscuits then use some powdered sugar to adjust the sweetness.
  2. Any nuts of your choice can be used.

Badam burfi / Almond Fudge

Heyyy heyyyyy heyyyy... today is a very special day for me :)  My little blog turned one today and I think this is the most appropriate time to thank all of you my dear readers for your love, support and appreciation.  I really can't thank you guys enough for bringing this day to my life.  Thanks again :)
To celebrate my first blog anniversary I have made Badam Burfi aka almond fudge.  As its Diwali, after two days, this sweet can easily get a place in your Diwali menu too.
Homemade sweets are always a better choice when it comes to taste, hygiene and purity.  And its a cherry on the cake if they could be made at home with little efforts.  This recipe fits the bill perfectly.  I loved the taste and texture of this burfi to the core.  It was just perfect.  Without much fuss,  you will get a perfect melt in mouth sweet in no time.  Just be patient while cooking the mixture.  Do not cook it on high flame and keep stirring once it start getting thick.
So here is my easy peasy yet so delicious badam burfi / almond fudge recipe that will surely steal your heart.

Ingredients -
Almonds    -   1 cup
Milk           -   6 tbsp (to grind the almonds)
Ghee          -   1 tbsp + for greasing
Sugar         -   1 cup
Almonds to garnish
Method-
  • Soak almonds in water overnight.  Peel and grind them with 6 tablespoons of milk to make a thick paste.  Set aside.
  • Grease a tray or baking pan to set the burfi.  Keep aside.
  • In a heavy bottomed non stick pan, melt ghee and add almond paste to it.  Fry for 2 minutes.  Add sugar and mix well again.  Let it cook on medium flame and stir every after 2 minutes. 
  • Once the mixture start getting a little thick, keep stirring without interval.  At one stage, the mixture would start leaving the sides of the pan.  Cook for a few more minutes till it comes to a lumpy stage.  This whole process will take about 15-20 minutes.  
  • Shift the mixture to the greased tray and level it well with a silicon spatula.  Let it cool down a bit and make cuts with a greased knife.  Stud each piece with a almond.  Let it cool down completely and serve.
  • Store in an airtight container.
 Notes-
  1. With 1 cup of almonds, you would get about 1 n 1/4 cup of thick paste.
  2. Make a fine paste to get the best results.
  3. If you wish, you can add 2-3 crushed green cardamoms.

Ragi Laddu

Today I am going to share my Ragi Laddu recipe.  This post was in my draft folder since quite a long time.  I thought to post it today as its my little sister's birthday.  So this one is specially for you NEHU :)
Laddus are almost everyone's favourite but people try to avoid them most of the times because of the guilt of having loads of ghee. So today's recipe is specially for those whose temptation of having sweets, kneels down in front of calories as these laddus are made with just 5 tbsps of ghee :)  And the cherry on the cake is that they are made of ragi flour.  This is called Health Bhi Taste Bhi :)  
These laddus were so delicious and addictive that all of them got finished up on the same day.   A guilt free anytime snack.  
Its a must try.  Simply follow the recipe and you will never go wrong. Try it and let me know the results.  Happy Cooking :)



Makes – 18 Laddus

Ingredients: 

Ragi flour
1 cup
Desiccated coconut
¼ cup
Khuskhus /Poppy Seeds
½ tbsp (roasted)
Castor sugar/
Powdered sugar
¾ cup+2 tbsp
Cashews
12 (roughly crushed)
Almonds
22 (roughly crushed)
Raisins
2 tbsp (chopped)
Ghee/Clarified butter
5 tbsp

My 1 cup measures 250 ml

Method:
  • Take a non stick pan and dry roast the ragi flour on medium flame for 5-6 minutes.  Shift to a dry bowl.  Set aside.
  • In the same pan, add 1 tbsp ghee and add chopped cashews and almonds.   Fry them till light brown then add raisins and fry for 20-30 seconds.  Remove from flame and set aside.
  • Use the same pan and add 2 tbsp ghee, add in roasted ragi flour and fry on low flame till nice aroma comes out.  Add in desiccated coconut and roasted poppy seeds.  Mix well.  Then add fried nuts and raisins.  Mix again.  Remove from flame and set aside.
  • Now shift the prepared mixture to a big bowl and add in sugar.  Mix everything well with hands.  Add 2 tbsp ghee and mix well with fingers.  Let the mixture warm.
  • Grease your hands, take some mixture and shape it into balls.  Likewise make laddus with the remaining mixture.
  • Store in an airtight container.


Notes:
  1. Use fine ragi flour to melt in mouth texture.
  2. Dried fruits and nuts can be added as per choice.
  3. Be patient while shaping the laddus as they would take some time in the beginning.
