WHOLE WHEAT BANANA BREAD

I love bananas.  They are yummy in taste and give nice flavour and texture to the dishes specially the baked goods.  I love using bananas in shakes, appams, muffins and cakes.  I will soon post all these recipes.
Now come to the recipe i.e. whole wheat banana bread.  This bread is a very healthy one.  I often make it for my one year old baby and she loves it.  Your kids will surely gonna love it.  I too love the flavour of this bread and its guilt free also as I have used whole wheat flour, oil and low fat milk.  I have also substituted sugar with jaggery.  Its so easy to make also.  Just mix up the things, bake it and its done.  So all in all its a guilt free no fuss anytime snack for the weight watchers.
Lets start making this delicious bread.  Happy cooking.

Ingredients:

Whole wheat flour
1 ½ cup
Banana (overripe)
2
Grated jaggery
½ cup
Oil
½ cup
Milk
½ cup
Baking soda
½ tsp
Baking powder
1 ½ tsp
Cardamom Powder
¼ tsp
Nutmeg Powder
¼ tsp
Rolled oats
1 tsp

Method:

  • In a bowl sift together wheat flour, baking powder, baking soda, nutmeg powder and cardamom powder.
  • Preheat oven at 180 degree.
  • Mash the ripe bananas and put in a blender, add jaggery powder, oil and milk.  Blend well.
  • In another bowl,  combine together the flour mix and banana mix.  Mix very well.
  • Transfer the batter to a loaf pan and sprinkle rolled oats on the top.
  • Bake for 45-50 minutes.
  • If you find the top of the loaf is getting burnt before ending the baking time, cover the loaf pan with an aluminium foil.
  • After 50 minutes, remove the bread from the oven and let it rest for 5 minutes.  After 5 minutes demould the bread and let it cool completely before slicing.
  • Enjoy this bread with a hot cup of tea.

Note:
  1. If you wish you can add some raisins too the batter to make it more yummy.
  2. You can use sugar instead of jaggery.
  3. You can make this bread in cake mould also and serve it with some icing.
