EGGLESS MANGO CAKE. The beginning with something sweet :)

Hello friends, here I am, beginning my first blog and expecting your love, appreciation and suggestions for improvements, if any.
I am an eggetarian but still I do not like the smell of eggs in baked goods so whenever I bake something at home I prefer to keep it eggless hence this cake :)
This is my version of healthy cake with a touch of experimenting :D  The cake came out very moist and yummy.
So I am leaving you here with this eggless mango cake, do try it and let me know how it turned out for you.





Ingredients:


Whole wheat flour
½ cup
All purpose flour
½ cup + 1 tablespoon
Mango pulp
2/3 cup
Curd 
4 tbsp
Baking soda 
½ tsp
Baking powder
¼ tsp
Sugar
2/3 cup
(you can use less sugar)
Mixed sultanas and dried fruit peels
½ cup 
Oil (i used vegetable oil)
¼ cup
Cardamom (powdered)

Method:
  • Take a bowl and mix  both the flours, baking soda and baking powder and keep aside.
  • Take the mango pulp and puree it in a blender.
  • Preheat the oven at 180 degree.
  • Take a bowl and add mango puree, sugar and oil and mix well till the sugar dissolves. 
  • In the mango sugar mix, add curd and mix well (you can use a blender for the same).  Add cardamom powder too.  Now slowly add flour mix in the same.  Mix well.
  • Mix half tbsp all purpose flour with the dried fruit mix and add to the cake batter.
  • Take a cake pan or bread pan (i used bread pan) and grease the same with oil and dust with some all purpose flour.
  • Pour the cake batter to the greased pan and bake in the over.  After 25 minutes, cover the cake pan with aluminium foil to prevent more browning on the top.  Bake for another 20 minutes and remove from the oven.  Insert a knife to check if the cake is properly baked.  If the knife comes out with the wet batter then bake for another 5 to 10 minutes.  (my cake took 50 minutes).
 Your yummylicious mango cake is ready so dig in and enjoy.
