Pineapple Laddoo

Today's recipe is Pineapple laddoo.  I love this sweet and never miss a chance to make it whenever I buy a pineapple.
Let me warn you friends,  these laddoo are so very addictive 😀 Whenever I make them they gets finished up on the same day 😁
Its a straight forward recipe and even beginners can make it perfectly.  Let's make it.  Happy Cooking ☺




Makes - 15 laddoo
Preparation Time - 5
Cooking Time - 15 min

Ingredients -

Pineapple pulp                   -     3/4 Cup
Sugar                                 -     6 tbsp
Milk powder                      -     1/2 cup
Desiccated coconut           -     1/2 cup
Cardamom powder            -     1 pinch



Method -
  • In a non stick pan, take pineapple paste and cook it until it gets a bit thick. 
  • Add milk powder and desiccated coconut. Mix very well. Add sugar and cardamom powder and mix again. Let the mixture cook until it starts leaving the sides of the pan. 
  • Remove the mixture to a big bowl and let it cool down completely. 
  • Take small portion of the mixture and roll it in between your palms and shape it into ball/laddoo.  Likewise, make laddoos with the remaining mixture. 
  • Roll the prepared laddoos in desiccated coconut. Serve.
  • Keep refrigerated in an airtight container and consume within 3-4 days.


Notes:
  • 1. Adjust the sugar level as per your liking.
  •  2. Quantity of desiccated coconut can also be adjusted as per liking but add more milk powder to adjust the consistency. 
  • 3. Instead of cardamom powder you can add a few drops of pineapple essence.

Whole Wheat Flax Seeds Crackers

Who says healthy food cannot be tasty. Today I am going to share a very healthy yet super tasty recipe with you. Its my favourite whole wheat flax seeds crackers.
Flax seeds are very good source of fibre, protein, magnesium, calcium, phosphorous and omega 3. It helps in digestion and is very good for skin too. It also helps in weight loss. The benefits are endless.
As for me, I just love the earthy flavour of flax seeds so always try to include it in my food. 
These flax seeds crackers are very easy to make and everyone is going to like them for sure. So here is the recipe for you all. Do try and let me know about your experience. Happy Cooking :)




Temperature - 180 degree
Time - 16 min
Makes - 32 crackers

Ingredients :-

Whole wheat flour         -    1 cup
Flax seeds                         -   4 tbsp
Oats flour                          -   2 tbsp
Roasted sesame seeds    -   2 tbsp
Baking powder                -   1/2 tsp
Salt                                     -   3/4 tsp
Black pepper powder     -   1/4 tsp
Powdered sugar               -   1 tbsp
Salted butter                     -   1 tbsp
Oil                                       -   2 tbsp
Curd                                   -   1 tbsp
Water                                 -   1 tbsp

Method:
  • In a mixing bowl, take wheat flour, oats flour, baking powder, salt, black pepper powder and powdered sugar .  Mix everything very well.  Add in cold butter and mix very well with your hand until you get a crumbly mixture.  
  • Add in oil, curd, sesame seeds and flax seeds and mix again.  Gradually add water and make a soft dough.
  • Cover the prepared dough and keep it aside for 20 minutes.
  • Meanwhile, preheat the oven at 180 degree and grease a baking tray and line it with butter paper.
  • Take the dough and roll it into a half inch thick sheet.  Cut the sheet into small squares with the help of a sharp knife or cookie cutter.  Place the cookies in the prepared tray and bake it for 16 minutes or until the edges gets slightly browned.
  • Remove the tray and place the cookies on the wire rack to cool down.
  • Serve fresh or store in an airtight container.



Notes-
1. You can keep the thickness of the crackers as per your choice.  According to the thickness, baking time may vary.

Mawa Coconut Laddoo

Hello to all my readers.  As, the festival of colors, Holi is near, I thought to post this easy laddoo recipe which hardly takes 10 minutes from start to finish.  Its a perfect recipe for beginners.
I used my instant mawa in this recipe but you can use readymade one too (just make sure its fresh).  Sweetness can be adjusted as per taste.
So lets start making these delicious Mawa Coconut Laddoo.  Happy Cooking :)


Makes - 6 laddoos
Preparation - time 2 minutes
Cooking time - 2 minutes

Ingredients :

Mawa / khoya               -     6 tbsp
Desiccated coconut       -    1/4  cup
Powdered sugar 
(I used castor sugar)      -    4 tbsp

Method:

  • Take the mawa in a microwave safe bowl and microwave for 2 minutes while mixing after every 30 seconds . 
  • Remove and let it cool down a little.
  • Add sugar and desiccated coconut.  Mix everything very well.
  • Take a small portion from the mixture and shape it into a laddoo. 
  • Serve.

No Bake Brownie Bites

Hello and a very happy Deepawali to all my dear readers  (sorry for wishing a bit late). After a long time I am coming back to check on my dear little blog.  Anyways, today's recipe will make up for all the delay :)  Its a No Bake Brownie that I made bite sized using my chocolate moulds.  You can make it in any shape and size.  Its pretty easy and even kids can make it with a little help.  Since I used microwave, it didn't take much time.  Just a handful of ingredients are required and you are ready to have a delightful and festive sweet in no time.  So lets start making these cute looking brownie bites.  Happy Cooking :)


Preparation time - 5 minutes
Cooking time - 10 minutes
Makes - 10-12 pieces

Ingredients:

Grated cooking chocolate   - 1/2 cup
Crushed biscuits 
(I used milk bikis)               - 1/2 cup
Condensed milk                  -  2 tbsp
Chopped nuts                      -  3 tbsp
Butter                                  -  1/2 tbsp

Method:
  • Take chocolate and butter in a microwave safe bowl and microwave for 15 seconds.  Remove and stir well.  Again microwave for 15 seconds.  Remove and mix.  At this stage, chocolate would start melting.  Microwave for another 10 seconds and stir well.  If chocolates is melted then you go ahead with the process, if not then again put it in the microwave for another 10 seconds.  
  • Add condensed milk in the melted chocolate and give a nice stir.  Add crushed biscuits and nuts and mix well everything.
  • Shift the mixture to a greased pan or silicon moulds and refrigerate for 1-2 hours.
  • Serve.




Notes:
  1. If you are using some lightly sweet biscuits then use some powdered sugar to adjust the sweetness.
  2. Any nuts of your choice can be used.

Mango Mastani

Hello to all my readers.  Finally I am here after a long long break.  I was cooking as before but couldn't blog that frequent. Anyways, hoping to continue my passion and post more recipes.  So lets start cooking.
This week I tried something that was in my mind for last 3 months.  Its a delicious mango drink i.e. Mango Mastani.  I had tasted this drink for the first time three months back in Mumbai.  Its a famous drink from Pune.  You will find so many shops selling Mango Mastani in Maharashtra. Its just a mango shake topped with vanilla ice-cream and garnished with chopped mango and nuts.  Its a breeze to make this drink at home.  No special ingredients or equipments and no sweating in the kitchen for hours.  You just need to blend a few ingredients and a delicious drink, bursting with mango flavour, is ready to relish.  Here mango season is over, so I used ready-made mango pulp for this recipe.  Fresh mango will definitely give you more flavour.  Fresh mango or pulp, whatever you use, trust me, you cannot go wrong with this recipe.

Preparation time - 5 minutes
Cooking time - 2 minutes
Serves - 3
Ingredients:
Mango pulp (I used readymade Alphanso pulp)
2 Cups
Sugar    
2 tbsp (adjust as per the sweetness of the mango)
Milk
1 cup
Vanilla Ice cream
6 scoops
Chopped almonds
2 tbsp
Chopped cashews
2 tbsp
Chopped pistachios
2 tbsp
Glazed cherries
2 (halved)












Method:
  • Take mango pulp sugar and milk in a blender and blend together nicely.
  • Take a tall glass and pour in the mango-milk mixture, top it up with 2 scoops of ice cream.  Garnish with nuts and glazed cherries.  
  • Make two more servings likewise.
  • Serve immediately.

Rose & Banana Smoothie

Smoothie is a quick breakfast for many of us.  Its so filling and at the same time delicious too.  I love to experiment with fruits, so I keep making smoothies and fruit punches.  This is the one I recently tried and loved the taste to the core.  
I have a bottle of concentrated rose squash (rooh afza) and except drinking it with milk, I love to use it in different ways.  I recently posted a rose milk pudding made with the same squash and it came out so good.



This rose and banana smoothie is so refreshing with dominant rose flavour.  Addition of banana and curd makes it healthy too.  Its a no fuss recipe so you can make it fresh.  Kids going to love this smoothie.  You can serve it as a party drink too.

Makes  - 1 serving
Time    -  5 min

Ingredients :

Frozen banana*
1
Concentrated rose squash (I used rooh afza)
2 tbsp
Thick curd
5-6 tbsp
Milk
2 tbsp
Cashew (roughly chopped)

Method:
  • Take all the ingredients in a blender and process for 30 seconds or till the mixture is smooth.
  • Serve immediately.

Notes:
  1. Make sure your curd is not sour.
  2. Use thick curd.
  3. For best results, make this smoothie fresh.
  4. You can substitute frozen banana with fresh banana and 2 ice cubes (for above quantity).
  5. For a healthier version use low fat curd and low fat milk.

*For frozen banana - keep the whole banana in the freezer for a day and use.

Rose Milk Pudding

A very Happy New Year to all my readers!!!!!
This is my first post for the year 2016 :)  And I am so excited to share it with you.  Its my favourite Rose Milk Pudding. 
This pudding simply melts in mouth and leaves behind that delicious rose flavour... yes!!! rose!!! as it has concentrated rose squash (most of you must be aware of the famous Rooh Afza).  It gave this pudding that rich rose flavour and required sweetness.
Apart from its taste, I love the way it looks .. so delicate, cool and kind of cute :D  The lovely pink color makes it look more beautiful.
Its an incredibly easy recipe and the end result will surprise you in terms of taste and looks.  You can serve it as a party dessert too.  My toddler loved it and as she doesn't like to take milk, I got so surprised to see the way she gobbled up this pudding :)  Happy ME :D

Cooking time - 8-10 min.
Freezing time - 1-2 hours
Serves -  4
Ingredients:

Full fat milk  
1 cup (250 ml)
Sugar            
1 tbsp
Gelatin          
1 tbsp+ 1/4 tbsp
Water            
2 tbsp
Concentrated rose squash  (I used Rooh Afza)
2 tbsp
Pink food color
a few drops









Method:
  • Take water in a microwave safe bowl and microwave for 40 seconds.  Take out and mix in gelatin.  Stir well till gelatin dissolves.
  • Take milk in a pan with sugar and heat it.  Once boiled, remove from heat and add gelatin mix.  Stir very well and let it cool down for 2 minutes.  Add concentrated rose squash and food color.  Mix well.  Pour the prepared mixture in silicon moulds or any pan.  If using metal pan, grease it first.  Freeze for 1-2 hours.  
  • Serve chilled.

Notes:
  1. Use full fat milk for best results. 
  2. Instead of Rooh Afza you can use rose essence and pink food color.
  3. Do not boil the gelatin.
